Sweet Potato Apple Knishes

Knishes can be deceptively simple with a couple of grocery store shortcuts! Puff pastry is the perfect shell for a sweet and savory knish filling that is perfect for the High Holidays. Remove the puff pastry from the freezer the night before and place in the fridge to thaw, or let sit on the counter for 20-30 minutes until softened.

Ingredients
2 sheets puff pastry (1 box)
2 large sweet potatoes, peeled and chopped
2 tbsp olive oil
1 medium apple, peeled and grated
2 cloves garlic, chopped
2 green onions, finely chopped
1 tsp paprika
¼ tsp sea salt
½ tsp black pepper
1 egg, whisked
Preparation
Preheat the oven to 375℉. Line a baking tray with parchment paper.
In a pot of salted water, boil the potatoes until fork tender, about 10-15 minutes.
Mash using a fork or potato masher and set aside.
Heat oil in a fry pan over medium heat. Add apple, garlic, onion, paprika, salt, and pepper, cooking for 7-8 minutes, stirring occasionally until mixture is dry and fully cooked.
Add apple mixture to sweet potatoes, mixing until combined.
Lightly roll the puff pastry using a rolling pin. Cut each sheet into 9 squares.
Add 2-3 tsp of potato mixture to each square. Bring each corner over top of the filling, pinching and twisting to seal.
Brush knishes with egg and bake for 20-25 minutes, or until golden.
