Roasted Brussels Sprouts with Honey Tahini Dressing

Brussels sprouts are more versatile than you think! When roasted, the natural sugars caramelize for a sweet and crispy flavor explosion! Drizzled with honey tahini dressing, these are sure to become a regular vegetable on the menu!

Ingredients

  • 700g (~1.5 lb) brussels sprouts, trimmed and halved

  • 3 tbsp olive oil

  • 1 tsp garlic powder

  • 1 tsp smoked paprika

  • Sea salt and pepper, to taste

  • 2 tbsp parsley, chopped

  • 2 tsp sesame seeds, toasted

Honey Tahini Dressing

  • 3 tbsp tahini

  • 1 tbsp honey

  • 1 tsp dijon mustard

  • 3 tbsp lemon juice

  • 2 tbsp water

Preparation

  1. Preheat the oven to 400℉. Line a baking tray with foil.

  2. In a large bowl, combine brussels sprouts, olive oil, garlic powder, paprika, salt, and pepper. 

  3. Transfer to the baking tray and roast for 30-35 minutes, or until crisp. 

  4. Meanwhile, make the dressing: combine tahini, honey, mustard, lemon juice, and water in a bowl, whisking until smooth, adding more water if necessary to achieve desired consistency.

  5. Drizzle mixture over roasted brussels sprouts and garnish with chopped parsley and sesame seeds.
