Black Eyed Pea Bean Dip

Serves: 8-10

Equipment:

Blender or food processor 

Ingredients:

  • 1 can black eyed peas, drained and rinsed (about 2 cups, cooked)

  • ½ tsp cumin

  • 2 cloves garlic 

  • 2 cups fresh spinach

  • ½ cup parsley

  • Juice of 1 lemon

  • 3 tbsp tahini

  • ¼ cup olive oil

  • Sea salt and pepper, to taste

Preparation:

  1. In a blender or food processor, combine black eyed peas, cumin, garlic, spinach, parsley, lemon juice, and tahini. 

  2. Slowly drizzle in olive oil while blending.

  3. Season with salt and pepper.

  4. Enjoy!
