Heart of Palm & Avocado Salad with Lemon Honey Dressing

Celebrate the circular nature of the year with round discs of tangy hearts of palm and avocado balls in this exciting salad, drizzled with a sweet and sour lemon honey dressing! You can find hearts of palm in the canned vegetable section of the grocery store. If you can’t find them, feel free to substitute your favorite vegetable in this salad!

Ingredients

Salad:

  • 1 avocado, peeled

  • ½ cup canned whole hearts of palm, drained and sliced

  • ¼ cup fresh mint leaves

  • 4 cups arugula

  • ¼ cup pumpkin seeds

Dressing:

  • 1 tsp lemon zest

  • Juice of 1 lemon

  • 2 tsp honey

  • 3 tbsp olive oil

  • Sea salt and pepper, to taste

Preparation

  1. Using a melon baller, scoop the avocado flesh into balls.

  2. Combine avocado, hearts of palm, mint, and greens in a large bowl.

  3. Make the dressing: combine lemon zest, juice, honey, oil, sal,t and pepper in a bowl.

  4. Drizzle over salad.

  5. Top with pumpkin seeds.

  6. Enjoy!
