Beet + Potato Kugel

Kugel is a comfort food staple, and beets are a common substitute for the shank bone on the seder plate. This Passover, make our bright pink Beet & Potato Kugel, which can be prepared in advance without worrying about your potatoes discoloring!

Ingredients
¼ cup vegetable oil
3 medium potatoes, Yukon gold or yellow
2 medium beets, peeled
1 medium yellow onion
2 cloves garlic
1/4 cup potato starch
Zest of 1 lemon
6 large eggs
Sea salt and pepper, to taste
Preparation
Preheat the oven to 400°F.
Generously grease a 9x13” baking dish with vegetable oil.
In a food processor with the grater attachment, grate the potatoes, beets, onion, and garlic.
Transfer to a bowl. Add potato starch, lemon zest, salt, and pepper.
In a medium bowl, whisk eggs until smooth. Add to the potato mixture.
Transfer to the baking dish, baking uncovered, for 35-45 minutes.
Slice and serve
