Beet + Potato Kugel

Kugel is a comfort food staple, and beets are a common substitute for the shank bone on the seder plate. This Passover, make our bright pink Beet & Potato Kugel, which can be prepared in advance without worrying about your potatoes discoloring!

Equipment

  • Food processor + grating attachment

Ingredients

  • ¼ cup vegetable oil

  • 3 medium potatoes, Yukon gold or yellow

  • 2 medium beets, peeled

  • 1 medium yellow onion

  • 2 cloves garlic

  • 1/4 cup potato starch

  • Zest of 1 lemon

  • 6 large eggs

  • Sea salt and pepper, to taste

Preparation

  1. Preheat the oven to 400°F.

  2. Generously grease a 9x13” baking dish with vegetable oil.

  3. In a food processor with the grater attachment, grate the potatoes, beets, onion, and garlic.

  4. Transfer to a bowl. Add potato starch, lemon zest, salt, and pepper.

  5. In a medium bowl, whisk eggs until smooth. Add to the potato mixture.

  6. Transfer to the baking dish, baking uncovered, for 35-45 minutes.

  7. Slice and serve

  • Get the kids involved by stirring the potato and beet mixture, noticing how bright the colors are!
