Smoked Salmon Lettuce Cups

Ingredients:

  • 1 head endive lettuce, leaves separated

  • 2oz smoked salmon, chopped

  • ½ avocado, diced

  • 1 tbsp red onion, finely chopped

  • Fresh dill, to garnish

  • Juice of 1 lemon

  • Black pepper

Preparation: 

  1. Fill endive leaves with salmon, avocado, and red onion. Top with dill, a squeeze of lemon juice, and black pepper.

  2. Enjoy!
