Shaved Fennel + Citrus Salad with Smoked Salmon

When preparing a holiday meal, oven space can be hard to come by between braising briskets and roasting vegetables, that’s why this no-cook fish starter is the perfect way to begin your Rosh Hashanah meal. It is customary to serve fish at Rosh Hashanah to symbolize being leaders in the coming year, being the “head” instead of the “tail.”

Ingredients

  • 1 fennel bulb, fronds reserved, thinly sliced

  • 1 navel orange, peeled and thinly sliced into rounds

  • 1 pink grapefruit, peeled and thinly sliced into rounds

  • ¼ red onion, thinly sliced

  • 4oz hot smoked salmon, flaked

  • 2 tbsp extra virgin olive oil

  • Sea salt and black pepper, to taste

Preparation

  1. Combine fennel, orange slices, grapefruit, and onion in a bowl or on individual plates. 

  2. Top with salmon and reserved fennel fronds. 

  3. Drizzle with olive oil, and season with salt and pepper.

  4. Enjoy!

Notes

  • Substitute smoked whitefish for salmon if you prefer!

  • If pescatarians are joining you for Rosh Hashanah, increase the amount of smoked salmon for a meat-free protein source!

  • Hosting a vegetarian meal? Avocado makes a great substitute for smoked salmon!
