Moroccan Carrot Salad

Ingredients
1lb carrots (5 medium), peeled and chopped
¼ medium red onion, thinly sliced
1 clove garlic, chopped
1 tbsp olive oil
½ tsp paprika
½ tsp cumin
¼ tsp cinnamon
¼ tsp coriander
¼ tsp ginger
¼ tsp turmeric
2 tsp preserved lemon, chopped (or 1 tsp lemon zest)
¼ cup almonds, chopped
2 tbsp fresh parsley, chopped
Sea salt and pepper, to taste
Preparation:
Preheat the oven to 400°F. Line a tray with baking paper.
Combine carrots, onion, garlic, olive oil, spices, lemon, salt, and pepper on the tray. Spread in an even layer.
Roast for 20-25 minutes, or until the carrots are tender.
Top with almonds and parsley.
