Olive Oil Orange Cupcakes

Ingredients

  • 1 1/2 cups all-purpose flour

  • 1 tsp baking powder

  • 1/4 tsp sea salt

  • 2 eggs

  • 3/4 cup sugar

  • 1 tbsp orange zest

  • 1 1/4 cup greek yogurt, plain

  • 1 tsp vanilla

  • 1/2 cup olive oil

Frosting & Garnish

  • 1/2 cup butter, unsalted at room temperature

  • 8 oz cream cheese

  • 1 tsp vanilla extract

  • 4 cup confectioners sugar

  • Cocoa powder, to garnish

  • Crushed walnuts, to garnish

Preparation

  1. Preheat the oven to 350°F. Grease or line a cupcake pan.

  2. In a medium bowl, sift together flour, baking powder, baking soda, and salt.

  3. In a large bowl, whisk eggs, sugar, orange zest, yogurt, vanilla, and olive oil until smooth.

  4. Add flour mixture to the wet ingredients, stirring until just combined.

  5. Fill the cupcake liners 3/4 of the way full.

  6. Bake for 18-20 minutes, or until a toothpick comes out clean. Let cool.

  7. Meanwhile, make the frosting: In the bowl of a stand mixture, whip the butter and cream cheese until light and fluffy. And the vanilla. Add the confectioners sugar, one cup at a time until incorporated.

  8. Transfer to a piping bag, or spread onto the cupcakes using a knife or spoon.

  9. Dust with cocoa and walnuts before “planting” your Days Cupcake Toppers.
