Olive Oil Orange Cupcakes

Ingredients
1 1/2 cups all-purpose flour
1 tsp baking powder
1/4 tsp sea salt
2 eggs
3/4 cup sugar
1 tbsp orange zest
1 1/4 cup greek yogurt, plain
1 tsp vanilla
1/2 cup olive oil
Frosting & Garnish
1/2 cup butter, unsalted at room temperature
8 oz cream cheese
1 tsp vanilla extract
4 cup confectioners sugar
Cocoa powder, to garnish
Crushed walnuts, to garnish
Preparation
Preheat the oven to 350°F. Grease or line a cupcake pan.
In a medium bowl, sift together flour, baking powder, baking soda, and salt.
In a large bowl, whisk eggs, sugar, orange zest, yogurt, vanilla, and olive oil until smooth.
Add flour mixture to the wet ingredients, stirring until just combined.
Fill the cupcake liners 3/4 of the way full.
Bake for 18-20 minutes, or until a toothpick comes out clean. Let cool.
Meanwhile, make the frosting: In the bowl of a stand mixture, whip the butter and cream cheese until light and fluffy. And the vanilla. Add the confectioners sugar, one cup at a time until incorporated.
Transfer to a piping bag, or spread onto the cupcakes using a knife or spoon.
Dust with cocoa and walnuts before “planting” your Days Cupcake Toppers.
