Lemony Chicken Noodle Soup

Ingredients

  • 2 tbsp olive oil

  • 1 medium onion, chopped

  • 2 carrots, chopped

  • 2 stalks celery, chopped

  • 2 garlic cloves, minced

  • 1 bay leaf

  • 6 cups chicken or vegetable stock

  • 1 tbsp lemon zest

  • 8 oz egg noodles

  • 2 cups shredded, cooked chicken

  • Juice of 1 lemon

  • ½ cup parsley

  • Sea salt and pepper, to taste

Preparation

  1. Heat oil in a pot over medium heat. 

  2. Add the onion, carrot, and celery. Cook for 5-6 minutes, or until vegetables begin to soften.

  3. Add the garlic, cooking for an additional 4-5 minutes.

  4. Add the bay leaf, stock, and lemon zest. Bring to a boil and simmer for 15-20 minutes, or until the vegetables are tender.

  5. Add the noodles and chicken, cooking for 8-10 minutes, or until noodles are tender. 

  6. Remove from heat, add lemon juice, and garnish with parsley.
