Lemony Chicken Noodle Soup

Ingredients
2 tbsp olive oil
1 medium onion, chopped
2 carrots, chopped
2 stalks celery, chopped
2 garlic cloves, minced
1 bay leaf
6 cups chicken or vegetable stock
1 tbsp lemon zest
8 oz egg noodles
2 cups shredded, cooked chicken
Juice of 1 lemon
½ cup parsley
Sea salt and pepper, to taste
Preparation
Heat oil in a pot over medium heat.
Add the onion, carrot, and celery. Cook for 5-6 minutes, or until vegetables begin to soften.
Add the garlic, cooking for an additional 4-5 minutes.
Add the bay leaf, stock, and lemon zest. Bring to a boil and simmer for 15-20 minutes, or until the vegetables are tender.
Add the noodles and chicken, cooking for 8-10 minutes, or until noodles are tender.
Remove from heat, add lemon juice, and garnish with parsley.
