Layered Vegetable Tart

Layers of flaky pastry, creamy goat cheese and colorful vegetables make this show stopping tart the perfect appetizer or bite for a crowd! Not only is it beautiful, but it is easy to make, without compromising on taste. Get creative with your favorite vegetables to mix up the colors and tastes that you like best!

Ingredients

  • 1 sheet puff pastry, thawed

  • 5oz soft goat cheese

  • 1 clove garlic, finely chopped

  • ¼ tsp black pepper

  • 1 medium carrot, thinly sliced using a peeler

  • 1 small zucchini thinly sliced using a peeler

  • 1 tbsp olive oil

  • 2 tbsp everything bagel seasoning

  • 2 tbsp parsley

Preparation

  1. Preheat the oven to 400°F. Line a tray with baking paper.

  2. Unroll the puff pastry sheet on the baking tray.

  3. In a small bowl, combine goat cheese, garlic, and black pepper. Spread goat cheese mixture on the pastry, leaving a ½ inch border.

  4. Fold the edges to create a ¼ inch frame around the goat cheese.

  5. Arrange the sliced vegetables across the cheese, overlapping slightly.

  6. Brush the border with olive oil, and sprinkle with everything bagel seasoning.

  7. Bake for 25-30 minutes, or until the pastry is golden and crisp.
