French Onion Soup with Cheesy Croutons

Ingredients

  • 2 tbsp butter

  • 3 medium onions, sliced

  • 1 tbsp all purpose flour

  • 1 tsp thyme

  • Pinch sea salt

  • 1 cup dry white wine

  • 6 cups vegetable stock or beef stock

  • 2 cups sourdough bread, cubed

  • ½  cup gruyere cheese or swiss cheese, grated

  • Sea salt and black pepper, to taste

Preparation

  1. Preheat the oven to 350℉. Line a tray with baking paper.

  2. Heat butter in a pot over medium-low heat. Add onions, stirring occasionally until deep golden brown, about 20-30 minutes. Add flour and cook for an additional 2 minutes. 

  3. Add thyme, salt, and wine. Bring to a boil and simmer for 5 minutes.

  4. Add vegetable stock, bring to a boil, and let simmer for 5-10 minutes. 

  5. Meanwhile, add bread to the lined tray in a single layer. Top with cheese. Bake for 10-12 minutes, or until melted.

  6. Top the soup with croutons. 

  7. Enjoy!
