French Onion Soup with Cheesy Croutons

Ingredients
2 tbsp butter
3 medium onions, sliced
1 tbsp all purpose flour
1 tsp thyme
Pinch sea salt
1 cup dry white wine
6 cups vegetable stock or beef stock
2 cups sourdough bread, cubed
½ cup gruyere cheese or swiss cheese, grated
Sea salt and black pepper, to taste
Preparation
Preheat the oven to 350℉. Line a tray with baking paper.
Heat butter in a pot over medium-low heat. Add onions, stirring occasionally until deep golden brown, about 20-30 minutes. Add flour and cook for an additional 2 minutes.
Add thyme, salt, and wine. Bring to a boil and simmer for 5 minutes.
Add vegetable stock, bring to a boil, and let simmer for 5-10 minutes.
Meanwhile, add bread to the lined tray in a single layer. Top with cheese. Bake for 10-12 minutes, or until melted.
Top the soup with croutons.
