Apple Parsnip Soup

Ingredients

  • 1 tbsp olive oil

  • 1 medium yellow onion, chopped

  • 1 carrot, chopped

  • 1 stalk celery, chopped

  • 2 medium granny smith apples, peeled and chopped

  • 1 lb parsnips, peeled and roughly chopped

  • 6 cups stock

  • 1 tbsp lemon zest

  • ½ cup coconut milk or cream

  • Lemon juice, to serve

  • Sea salt and pepper, to taste

Preparation

  1. Heat oil in a pot over medium heat. Add onion, carrot, and celery, cooking until softened, about 7-8 minutes.

  2. Add apple, parsnip, and stock. Bring to a boil and let simmer for 20 minutes, or until softened.

  3. Blend until smooth.

  4. Add lemon zest and coconut milk, season to taste.

  5. Add lemon juice before serving.

  6. Enjoy!
