Apple Parsnip Soup

Ingredients
1 tbsp olive oil
1 medium yellow onion, chopped
1 carrot, chopped
1 stalk celery, chopped
2 medium granny smith apples, peeled and chopped
1 lb parsnips, peeled and roughly chopped
6 cups stock
1 tbsp lemon zest
½ cup coconut milk or cream
Lemon juice, to serve
Sea salt and pepper, to taste
Preparation
Heat oil in a pot over medium heat. Add onion, carrot, and celery, cooking until softened, about 7-8 minutes.
Add apple, parsnip, and stock. Bring to a boil and let simmer for 20 minutes, or until softened.
Blend until smooth.
Add lemon zest and coconut milk, season to taste.
Add lemon juice before serving.
