Butterscotch, Marshmallow, & Walnut Cookies

Get the flavor of roasted marshmallows with these chewy Butterscotch, Marshmallow, & Walnut Cookies! These sweet treats are the perfect finale for a fire-themed festive meal.

  • Stand mixer

Ingredients

  • 1 cup brown sugar

  • ¾ cup butter, at room temperature

  • 1 whole egg

  • 1 egg yolk

  • 1 tsp vanilla

  • 2 cups flour

  • ½ tsp baking soda

  • ½ tsp sea salt

  • ½ cup butterscotch chips

  • ½ cup mini marshmallows 

  • ½ cup walnuts, chopped

Preparation

  1. Preheat the oven to 350°F. Line 2 trays with baking paper.

  2. In a bowl of a stand mixer, cream the brown sugar and butter until fluffy.

  3. Add the egg, egg yolk, and vanilla, mixing until combined.

  4. Add the flour, baking soda, and sea salt, mixing until just combined.

  5. Pour in the butterscotch chips, marshmallows, and walnuts, mixing until incorporated.

  6. Scoop a heaping table of cookie dough onto the baking trays, leaving ~1 inch between each cookie.

  7. Bake for 10-11 minutes, or until golden.

  8. Let cool on the pan.
