Apples & Honey Cheese Plate with Savory Shortbread Crackers

Start the new year meal off on the right foot with this apple and honey themed cheese plate with homemade crackers using the bee-utiful embossed roller included in your Rosh Hashanah box! Ingredients
Cheese plate:
3-4 types of cheese, any kind you prefer
3-4 types of apples, sliced
Honey
Crackers:
1 cups all purpose flour
½ teaspoon salt
1 tablespoon honey
2 tbsp parmesan cheese, grated
1 tsp rosemary, finely chopped
½ tsp thyme
½ cup cold butter, cubed
½ tbsp cold water
Preparation
In a food processor, combine flour, salt, sugar, cheese, rosemary, and thyme.
Add butter, pulsing to combine, adding water if necessary. Alternatively, use your fingers to combine into a crumbly dough.
Gather the dough in your hands and squeeze into a ball. Pat into a 1-inch thick disc, wrap, and chill in the fridge for 1 hour.
Preheat the oven to 375°F. Line a tray with baking paper. On a lightly floured surface, roll dough into slightly thicker than 1/16th inch thick rectangle. Lightly flour the top of the circle.
Use the Days Embossed Bee Roller, pressing firmly to imprint the design onto the dough, rolling over just once.
Transfer the dough to the baking trays. Freeze for 20-30 minutes. Freezing helps the crackers to retain their shape and pattern. Cut through the dough with a paring knife into small squares, approximately 2x2 inches.
Bake for 8-10 minutes, or until lightly brown. Let cool, they will be fragile!
Serve with a cheese and fruit platter.

Get the kids involved by asking them to roll out the dough!
