Four Species Cookies

 

On Sukkot, we gather four species of plants for a special ritual. Some say that each species represents a different part of our body and its faculties. This year, honor this holiday tradition by baking festive cookies to enjoy in your Sukkah.

COOKIE RECIPE

Total Time: 60 - 90 mins
Makes: about 40 cookies

These cookies are the perfect make-ahead-Sukkot treat to share with your friends and family in your Sukkah!

Ingredients

  • ¼ cup butter

  • 1 egg

  • ½ cup sugar

  • 1 tsp vanilla extract

  • 2 cups all-purpose flour

  • ⅓ tsp salt

  • 1 tsp lemon zest (to give it the Etrog flavor!)

  • 2 tsp of chopped mint to give it that green color (optional)

Preparation

STEP 1 - Make cookies

  1. In a large bowl, mix butter, egg, sugar, lemon zest, mint, and vanilla extract with a wooden spoon until combined. You can also use a whisk.

  2. Add flour and salt. Keep mixing.

  3. Once the dough forms, remove it from the bowl and form into a ball (don’t over-mix!)
    Tip: If the dough is crumbling, add a spoon of soft butter, or 2-3 tsp of cold milk or water

  4. Wrap with plastic wrap and refrigerate for at least 30 minutes, or overnight.

  5. If refrigerated for over an hour, let the dough warm up a bit before the next step.

  6. Preheat the oven to 350°F. Line a baking tray with parchment paper.

  7. Generously flour each piece of dough and roll out until ¼-inch thick.

  8. Follow the instruction below to shape the cookies.

Cut

Use the green piece to press and cut out a shaped cookie.

 

Press

Insert the yellow piece. Press firmly to transfer the design like a stamp.

 

Lift

Gently remove both pieces to reveal the stamped cookie. Transfer to a tray for baking.

 

STEP 2 - Bake!

  1. Place cookies on baking trays, and bake for 10-15 minutes, or until they begin to turn golden brown.

  2. Remove and allow to cool on the tray for 5 minutes. Then, transfer to a wire rack to fully cool.

STEP 3 - Shake!

Serve your cookies in the Sukkah, and shake before you eat!
