The Passover Meal

 
 

The Passover meal is served after 10 long steps of the Haggadah. While everyone has already eaten quite a lot it’s the moment everyone has been waiting for.

There are two main Kosher rules that can be kept (this is up to you):

  1. Everyday Kosher - don’t mix meat and dairy, for example the dessert will not include butter or cream (which is where vegan desserts come in very handy!) and in a mashed potato one would substitute butter and cream with olive oil.

  2. Passover Kosher - don’t eat chametz food: fermented wheat, rye, spelt, barley and oats.. so no bread, cookies and desserts using flour. Some also avoid Kitniyot - corn, rice, beans and lentils. The super observant eat only food that is certified Kosher for Passover, meaning that it is pure Kosher, and was not produced in the same facility with Chametz food.

A typical meal includes:

  1. Matzo ball soup

  2. Fish Starter

  3. Main Lamb Dish

  4. Dessert

Matza

This is the bread of the meal. You can buy matza, or attempt to make your own - see recipe below:

Key Ingredients:

  • 5 cups sifted all-purpose flour

  • 2 tbsp olive oil

  • Salt

Matzo Ball soup

Chicken Soup Recipe by Tory Avey

Key Ingredients:

  • 3-4 lbs whole chicken

  • 6 large carrots

  • 6 celery stalks

  • 1 yellow onion

  • Handful fresh parsley + dill

  • Peppercorns, 2 bay leaves, Kosher salt

Matzo balls

Key ingredients:

  • 3/4 cup matzo meal

  • 1 tsp baking powder (Passover-certified kosher baking powder)

  • Garlic powder, onion powder, white pepper (optional)

  • 3 large eggs

  • 3 tbsp melted schmaltz (or substitute grape seed oil)

  • 1 tbsp minced fresh dill (optional)

Fish Starter

Gefilte Fish or

Gefilte fish is a classic recipe of ground fish poached in fish stock. You can buy canned Gefilte fish, have it delivered or make it using a recipe such as this one:

Key Ingredients:

  • 1½ pounds halibut, 1½ pounds salmon

  • Matzo meal

  • Dill, parsley sprigs, thyme

  • Sugar, salt, ground pepper, peppercorns, fennel seeds, bay leaves

  • 1-2 lemon

  • 3 eggs

  • 5 carrots, 2 large yellow onion

  • 1½ cups dry white wine

  • Prepared horseradish, for serving

Chraimeh (Fish cooked in spicy tomato style sauce)

Key Ingredients:

  • Caraway seeds, paprika. ground cumin, cayenne pepper, ground cinnamon

  • Sunflower oil

  • All-purpose flour - substitute with Matzo Meal

  • 4 8-ounce 1 1/4'-thick, 6'-long salmon steaks 

  • 6 garlic cloves

  • 1 serrano chile (with seeds)

  • Tomato paste

  • 1-2 lemons

  • Sugar

  • Fresh cilantro

Main Dish

Lamb Osso Bucco or

Key Ingredients:

  • 2 pounds lamb slices cut off the neck, bone in – about 10 round slices

  • Substitute flour with matzo meal

  • 1 onion, 6 stalks celery, 6 carrots, 5 garlic cloves, 2 bay leaves

  • 1 cup dry red wine

  • 2 cups chicken stock

  • 2 tomatoes
