Yam Pancakes
Orna & Ella was a famous restaurant in Tel-Aviv and this dish was their most popular dish, from the day they opened to the day they closed, a few years ago. This version was adapted and translated from Hebrew. Enjoy!
Ingredients for pancakes:
21⁄2 lbs of yam (any sweet potato can work)
2 tsp soy sauce
3⁄4 cup flour
1 tsp sugar
Ingredients for dipping sauce
3⁄4 cup of chopped chives
1 cup of sour cream
1⁄3 cup of mayonnaise
1 tsp mustard
1 tsp lemon juice
Salt and black pepper to taste
Oil! (butter…)
At least 1 tsp salt butter for frying
Tools:
Medium mixing bowl
Colander
Piping bag + Piping tip (or a plastic bag with a hole)
Non-stick frying pan
Instructions
Peel the yams and cut into large pieces. Cook in a large pot with water until completely soft.
Place in a colander between 2 hours to overnight, until all the fluids drain out.
Place in a bowl. Add the soy sauce and mash with your hands. Add the flour, sugar and salt and pepper and continue to mix until you have a consistent mixture. Remove any large chunks.
The mixture needs to be consistent and a bit sticky. Add additional flour if needed to achieve this
Note: Excessive mixing may make the mixture too sticky.
Mix all ingredients of the dipping sauce in a serving bowl and keep cool.
Fill a piping bag with the pancake mixture and connect a piping nozzle. Alternatively, you can use a plastic ziploc bag and make a 1⁄4" hole.
Frying
Melt butter in a non-sick frying pan
Create a little pancake (about 2.5”) in circular motion
Cook on both sides until brown.
Since the Yams are already cooked ahead of time, it doesn’t take too long to cook!
The sauce
Mix all ingredients and mix lightly.
Add salt and pepper to taste.
