Smoked Paprika Deviled Baby Potatoes

If you love deviled eggs, you’ll love these smoky deviled baby potatoes, the perfect side dish for Lag Ba'Omer! Baby potatoes are hollowed, roasted until crisp, and filled with a smoky mixture of potatoes, mayonnaise, mustard, and paprika for a flavor-filled bite!

Equipment

  • Plastic zip-top bag or piping bag, food processor

Ingredients

  • 1 lb baby potatoes

  • 2 tbsp olive oil

  • ¼ cup mayonnaise

  • 1 tbsp smoked paprika

  • 1 tsp lemon juice

  • ½ tsp hot sauce

  • 1 tsp dijon mustard

  • 2 tbsp fresh chives

Preparation

  1. Add potatoes to a pot and cover with water. Salt liberally.

  2. Bring to a boil, and cook for 12-15 minutes or until fork-tender. Drain, and let cool.

  3. Preheat the oven to 400°F. Line a baking tray with foil.

  4. Halve each potato, and using a ½ tsp measure, scoop out the potato filling. Set aside.

  5. Transfer the potato skins to the lined tray, and drizzle with oil. Bake for 15 minutes or until crisp.

  6. Meanwhile, combine the potato filling, mayonnaise, paprika, lemon juice, hot sauce, and mustard in a food processor. Transfer to a piping bag, and refrigerate until ready to pipe.

  7. Remove the potato skins from the oven. Let cool slightly.

  8. Pipe the filling into the potato skins.

  9. Top with chopped chives.

  10. Enjoy!
