Simple Green Shabbat Salad

Serve up a simple, refreshing green salad to complement a rich and satisfying cholent for your next Shabbat meal. This is the perfect base recipe for using up whatever herbs and vegetables you have on hand from your week.
Ingredients
4 cups mixed lettuce
1 green onion, thinly sliced
1 stalk celery, thinly sliced
½ cup snap peas halved
½ cup mixed herbs
¼ cup olive oil
2 tbsp lemon juice
1 tsp lemon zest
1 tsp Dijon mustard
½ tsp honey
Sea salt and pepper, to taste
Preparation
1. Combine lettuce, green onion, celery, snap peas, and herbs in a large bowl.
2. In a small bowl, combine olive oil, lemon juice, zest, Dijon mustard, honey, salt and pepper.
3. Drizzle dressing over the salad, toss, and enjoy!
Notes
Get creative and add your favorite fruits and vegetables to this salad.
Serving a dairy meal? Add goat cheese or shaved parmesan on top.
