Roasted Cauliflower with Herbed Tahini Dressing

Skip the potatoes, and make this Roasted Cauliflower Dish! Cauliflower is the perfect side for a rich meal, especially drizzled with a fresh, and flavorful herbed tahini dressing. When roasted, cauliflower becomes addictively crisp with a hint of sweetness. Whether you drizzle or dip the tahini dressing, you may want to double the recipe… it’s that good!

Ingredients
1 large head cauliflower, cut into florets
3 tbsp olive oil, divided
1 tsp smoked paprika
1 tsp garlic powder
½ tsp red chili flakes
2 tbsp chopped parsley, to garnish
2 tsp sesame seeds, to garnish
1 tsp lemon zest, to garnish
Tahini Dressing
3 tbsp tahini
½ tsp cumin
1 sp lemon zest
3 tbsp lemon juice
1 cup fresh herbs (a mix of parsley, cilantro, basil, and/or mint)
3-4 tbsp water, as needed
Sea salt and pepper, to taste
Preparation
Preheat the oven to 400°F. Line a baking tray with foil.
Add cauliflower to the baking tray. Drizzle with 2 tbsp olive oil, garlic powder, paprika, red chili flakes, salt, and pepper. Spread cauliflower in an even layer, and roast for 30-35 minutes, or until golden.
While the cauliflower is roasting, make the tahini dressing: Combine tahini, cumin, lemon zest, lemon juice, fresh herbs, water, and remaining 1 tbsp olive oil, in a blender, puree until smooth.
Drizzle tahini dressing overtop the cauliflower. Top with parsley, sesame seeds, and additional lemon zest.

Looking for a vegetarian option at your dinner table? Add a can of drained chickpeas to your tray and roast them with the cauliflower for a plant-based protein option!
The Tahini Dressing with thicken over time, thin it out with 1-2 tbsp water or lemon juice before serving.
