Carrot Apple Soup

Begin your holiday meal with a warming bowl of Carrot Apple Soup full of symbolic Rosh Hashanah foods. This soup is packed with fresh carrots, sweet apples, and a hint of ginger for a sweet way to kick off your meal and new year!
Equipment
Blender, or immersion blender
Ingredients
1 tbsp olive oil
1 medium yellow onion, roughly chopped
3 cloves garlic, crushed
1 tbsp fresh ginger, chopped
1lb carrots, chopped (5-6 medium carrots)
2 green apples, with peel, cored and chopped
4 cups vegetable stock
1 tbsp apple cider vinegar
Sea salt and pepper, to taste
2 tbsp chopped parsley, to garnish
Apple chips, to garnish
Preparation
Heat oil in a pot over medium heat.
Add the onion, cooking for 4-5 minutes or until it begins to soften.
Add garlic, ginger, carrots, and apple, cooking for 10-12 minutes, or until the vegetables begin to soften.
Cover the vegetables with stock. Bring to a boil, and simmer, uncovered for 15-20 minutes or until you can pierce the carrots with a fork. Remove from heat and add apple cider vinegar. Season with salt and pepper.
Transfer the soup to a blender, working in batches, pureeing until smooth.
Pour the soup back into the pot, and reheat before serving.
Serve with chopped parsley and apple chips.
