Grilled Peach and Arugula Salad

Grilled peaches are the secret ingredient in this arugula salad. When met with heat on the grill, peaches are caramelized and softened, pairing perfectly with spicy arugula and nutty hazelnuts.

Equipment

  • Food processor, grill, grill pan, or gas stove

Ingredients

  • 3 peaches, quartered

  • 1 tbsp olive oil

  • 6 cups arugula

  • ½ red onion, thinly sliced

  • ¼ cup hazelnuts, chopped

Dressing:

  • ¼ cup olive oil

  • 3 tbsp lemon juice

  • 1 tbsp maple syrup

  • 1 clove garlic

  • 1 cup fresh basil

  • Sea salt and pepper, to taste

Preparation

  1. Heat a grill to medium-high heat. Brush peaches with olive oil. 

  2. Grill, cut side down, undisturbed for 5-6 minutes, or until grill marks form. Flip, and cook for an additional 2-3 minutes. Set aside.

  3. Combine arugula, red onion, and hazelnuts in a bowl. Top with grilled peach wedges.

  4. Make the dressing: combine olive oil, lemon juice, maple syrup, garlic, basil, salt, and pepper in a blender until smooth.

  5. Drizzle dressing over salad.

  6. Enjoy!
